A lovely vibrant, fruity cup, with bright acidity and a balanced and lingering sweetness that reminds us of clementine and apricot.

We get plenty of cherry and deep red fruits on the aroma, and hints of cocoa on the finish.

A complex lot with lots going on.

If you're brewing this one on V60 and really want to focus on in the bright citric notes, this recipe is also well worth trying out:

Bloom 50g

@ 0:40 pour to 100g total

@ 1:10 pour to 150g total

@ 1:30 pour to 200g total

@ 1:50 pour to 240g total

You should get a really nice bright cup with plenty of mandarin and a touch of red fruit notes.

    Grind Size: We're fairly fine for this one. We're at 38 on our DF64, which is firmly into V60 grind range usually.

    Pours:

    1. Bloom 50g

    2. at 30s, pour 100g to 150g total.

    3. at 45s, pour to 220g total.

    4. at 1:15, pour to 280g total.

    5. at 1:40, pour to 340g total.

    6. at 2:00, pour to 390g total

    Total water: 390g

    Total Brew Time: ~ 3:15

  • Aeropress

    Coffee: 14g

    Grind Size: Fine. (we're grinding at 25 on a DF64)

    Water: 200g

    Ratio: 1:14

    Brew Time: 2:30 (flip at 2 mins, 30s slow press)
