Here's a fun Tuesday morning project.
Today we're going to take our new Ethiopian Natural from Layo Toraga, brew it up 3 different ways and compare each method side by side.
We'll list the recipes we're using below too, so you can play along at home, or just pick whichever one sounds most up your street and skip straight to brewing that way.

Recipe:
14g : 220g, ground at medium-fine (50 on our shop DF64)
We used our 4 pour, double bloom recipe for this one, with pours as follows.
Pour 1: 50g bloom.
At 0:30, pour 2nd bloom to 100g total.
At 1:15, 3rd pour to 170g total,
At 2:00, final pour to 240g total.
Total brew time should be around 3:15.
Cup notes:
Light and bright with lots of fresh red fruits. Pleasant, sweet acidity.
Tasting notes:
Fresh strawberries, red fruits, canned pineapple juice, lemon.
Kalita Wave
Recipe:
We used our standard single bloom, 6 pour recipie for this to brew a large 400g yield on a Kalita Wave 185.
25g dose to 400g total water, with a total brew time of 3:30. We ground at a setting of 55 to hit this target brew time.
Using the standard white 185 wave filters, the pours went like this:
@ 0:00 - 1st pour, 50g bloom
@ 0:30 - 2nd pour to 150g total
@ 0:45 - 3rd pour to 220g total
@ 1:15 - 4th pour to 280g total
@ 1:40 - 5th pour to 340g total
@ 2:00 - 6th pour to 400g total
Cup notes:
On the Wave, this one definitely has a little more body to it and a deeper sweetness. The fresh berries turned into jammy, cooked red fruits and the finish got much longer with a lingering, sticky finish.
Tasting notes:
Strawberry jam, cherry, rich fruit cake, lime.
Aeropress
Recipe:
14g : 240g. Ground at 50 on a DF64. 212F water.
Inverted method. No bloom, add all water at once then stir 2x back and forth.
Flip at 2 mins and plunge. Total Brew Time 2:24.
Cup notes:
Medium body, long finish. Mid-high acidity. Lower sweetness.
Tasting notes:
Strawberry, lime, hints of cherry.
Additional brewing notes:
I'd be tempted to up the dose here if I were to brew this again. This cup was good, but it had some hints of astringency on the finish, which went away as it cooled. Upping the dose slightly and tightening up the ratio would allow me to decrease the extraction percentage without sacrificing TDS and body (which is what would potentially happen with a courser grind). That adjustment should hopefully help to brighten the cup up a little and get rid of that slightly drying finish.
