This comfortable and approachable Guatamalan lot is the perfect fall coffee.
It's a washed Bourbon from Ricardo Zelaya and the team at Finca Puerte Verde, with lots of light caramel notes, and a juicy stone fruit sweetness that reminds us of peaches.
Enjoy it on filter or espresso.

How To Brew Puerta Verde Bourbon

Coffee: 15g
Grind Size: A bit more coarse than usual. We're at 45 on a DF64.
Water: 205F
Pours:
1. Bloom 50g
2. at 40s, pour 20g to 70g total.
3. at 1:30, pour to 250g total.
Total water: 250g
Total Brew Time: ~ 2:55 - 3:00
We like the double bloom single pour recipe for this coffee because it creates a high water column, getting fines up onto the filter and out of the slurry. This makes for a nice clean cup, with bright stone fruit notes and a sharper grapefruit style acidity.

Coffee: 20g
Grind Size: Coarse. (we're grinding at around 55 on a DF64)
Water: 300g @ 205F
Pours:
- Bloom 60g
- 0:45 pour to 150g total
- 1:20 pour to 225g total
- 1:45 pour to 300g total
Brew Time: ~3:10
We used wave 185 filters for this brew. The high contact of the wave filters on the origami brewer really helps to speed this brew up, which seems to suit this coffee nicely. On the origami, this coffee is more balanced and approachable - quite a bit sweeter than with the V60 recipe and with a much more toned down acidity.

Finca Puerta Verde
Finca Puerte Verde is located just outside of Antigua, Guatemala, with a long history of coffee farming under multiple generations of the Minondo family. The farm is now run by Ricardo Zelaya, and together with his team Ricardo has invested heavily in recent years on rejuvenating the farm. Ricardo himself is a forth generation coffee producer, and the family now owns and manages 3 farms in the area - Finca Puerta Verde, Santa Clara and Carrizal. Together, he and his team are dedicated to preserving and improving the regions reputation as one of Guatemala's top coffee growing regions.
