The Producer
Jhonny and his wife, Cleotilde, have been growing coffee on their 4 hectares land in El Huabo for 14 years. They were previously associated with a large local cooperative and could not escape the poverty that so many producers still face. By hearing about Origin Coffee Lab and starting to work with them 5 years ago, their profitability has improved drastically. They have replanted most of their farm and adopted new agricultural practices that have helped improve both quality and yield and their production is now reaching levels that would not have been possible without their guidance. Last year, Johnny was able to invest in a new family kitchen and a car. For the next harvest, they also plan to plant exotic varieties to diversify the farm's offer. For Jhonny and Cleotilde, the future is bright!

Coffee: 25g
Grind Size: Medium fine. We're at 41 on our DF64. Probably closer to V60 grind range.
Pours:
1. Bloom 50g
2. at 30s, pour 100g to 150g total.
3. at 45s, pour to 220g total.
4. at 1:15, pour to 280g total.
5. at 1:40, pour to 340g total.
6. at 2:00, pour to 400g total
Total water: 400g
Total Brew Time: ~ 3:15
